My All-Time Favorite Salmon Recipe

Spoiler Alert - it's Ina Garten's Recipe

My plan for the next few blogs is to share some relatively healthy dinners because if you're like me, you've been overeating since Thanksgiving and it's time to detox. We eat a lot of salmon in our house and after years of testing, this is the best salmon recipe I've come across. Not only is it lick-the-plate-clean delicious, but it only has five ingredients.

Ina Garten calls it Asian Grilled Salmon and here's the recipe

Side note, if you don't love Ina Garten (the Barefoot Contessa), we will never be friends. Much like Liz Lemon in 30 Rock, Ina is one of a handful of things I love in this world.
Liz Lemon: I'm like that woman on the Food Network whose husband only comes home on the weekends, and spends the rest of the time eating and drinking with her gay friends.
Jack Donaghy: Her name is Barefoot Contessa, Lemon, and you will never be like her, starting with the 'barefoot' part.
Back to the best salmon you'll every cook... here are the five ingredients:

  • Wild Caught Salmon (I typically get two 6 oz. pieces) for the two of us
  • 2 Tbsp. Dijon Mustard
  • 3 Tbsp. East-West Spicy Ginger Teriyaki Sauce (you can use soy sauce but this teriyaki sauce is sweet and spicy and so good)
  • 6 Tbsp. Olive Oil
  • 1/2 tsp. Minced Garlic
Wisk together all these ingredients and lay the salmon skin side up into the marinade. The great thing about this marinade is that it only needs to sit for 10 minutes.

It's recently been brought to my attention that none of my girlfriends have cooked on a George Foreman Grill since college. So either I'm on to something or I'm still stuck in college. But since I'm not eating ramen packets and drinking Natty Lite anymore, I'd like to think I'm on to something.

Place the salmon on the George Foreman and cook for 7-8 minutes. Do not overcook it. It should still be a little pink in the middle. You can check the doneness by cutting into it and looking inside.

There you have it! Salmon that's crispy on the outside, tender on the inside, and infused with Asian flavor. Happy detox day 1.
